Foule Mudammas Recipe

*1 lb. Fava Beans

*3/4 Clove Garlic

*3 tsp. Olive Oil

*1/4 Cup Lemon Juice

*3/4 tsp. Salt

*1 tsp. Parsley, Chopped

Food processor.

Boil Fava beans for 1 - 2 hours over medium heat. Drain half the water. Add salt, lemon juice, and crushed garlic. Mix well, or slightly mash if desired. Pour in a bowl and garnish with chopped parsley and olive oil. If desired, decorate with slices of pickles and hot peppers, green onions, and chopped parsley. Serve for breakfast with pita bread. This could also be used as an appetizer or a meatless dish.
